Description
The duration of vatting and maceration before and after fermentation has been adapted for each grape variety, in order to optimize the extraction due to the particularity of this vintage. A barrel aging, in French oak of 225L, was observed for a period of about 18 months. In the same time, the malolactic fermentation also took place. After bottling, the wine rested in the bottle for a few years before being placed on the market, so as to allow the tannins of this cuv�e to soften further.
