Description
The cuvaison did not provide for maceration or extreme extractive techniques. The must has fermented on marc in stainless steel tanks at controlled temperature. After 3 weeks, following the decuvage and pressing, the wine was moved to a stainless steel tank for an ageing of about 10 months. Malolactic fermentation was also carried out in vats.
